Claypot Rice

Rice cooked in a claypot is one of the favorites among the locals especially in cooler weather. Often times the cooking is done outside the restaurant. (Seen above is outside a restaurant in Causeway Bay.) The varieties usually include Chinese sausage, spare ribs (pork), preserved salty fish, chicken and mushrooms, minced pork, etc. They are most common in what is called "tea restaurants" ("cha chaan tang" in Cantonese.)
